Olive oil is one of the most widely used fats in natural cooking — but the labels can be confusing, and the quality varies dramatically depending on how the oil is extracted. Knowing the difference helps you choose oils that support whole‑food nutrition, clean eating, and the kind of lifestyle stewardship that leads to wholeness.

Extra Virgin Olive Oil (EVOO)
Extra Virgin is the highest‑quality olive oil available. It comes from the first mechanical extraction of fresh olives — no chemicals, no heat, no refining.
